I cook pork belly sometimes. I usually get my pork belly from the nearby Whole Foods store at about 50% lean. My steps of cooking the pork belly are the following:
  1. Place chunks of pork belly in a pot or a wok on medium heat, let them cook for 5 minutes, stir occasionally
  2. Put in some sugar, ginger root cut into pieces, bay leaves, dried star anise, turn heat to high and stir occasionally for 5 minutes
  3. Put in some soy sauce and cooking wine, let the pork belly cook for 3 minutes
  4. Pour hot water in to let the pork belly semi-submerge in water and turn heat down to medium low, let it cook for 1 hour or until most of water is gone
  5. Move pork belly chunks to small bowls and move the bowls to a food steamer and let the pork belly cook in the steamer on medium high for 1 hour
The pork belly should now be done and ready to serve.
