I hope everyone had a wonderful Martin Luther King Jr. Day(MLK Day).
When I fry eggs sunny side up, I sometimes reuse the fat out of the sausages I heat in the same pan right before. But it doesn't take the same amount of time to get the eggs done, sometimes it takes more time, sometimes it takes less. Last week, I saw a visible amount of water coming out of the kind of sausages I was heating in the pan. When I fried the eggs afterwards, it took slightly longer. Then, I realized that different types of sausages yield different mixes of water and fat when heated, some sausages yield more water, others yield less water, and more water in the mix probably requires more time in frying of the eggs. I think it's just best to fry the eggs with new oil or butter which doesn't have any added water. This way, the frying is likely finished after the same number of minutes with the assumption that the same number of eggs, the same amount of oil, and the same heat level are applied.
